If you thought your weight-loss diet was getting a bit monotonous we would like to introduce you to the spiralizer! This kitchen gadget produces two thicknesses of noodles and a large spiral from any number of vegetables. Items on our shopping list such as cucumber, eggplant, jicama, pumpkin and zucchini make perfect spiralized dishes!

You can use the “noodles” in hot or cold dishes. Try out our recipe below or try sautéing with warming curry spices (curry powder, cumin, and turmeric). Just remember that because of the high water content, zucchini noodles will shrink a bit with cooking. You could also have a cold salad topped with our Lemony Raspberry Vinaigrette (read post here). This kitchen gadget can be purchased online or from several major retailers. We are excited about our noodle-shaped veggies!

Spiralized Zucchini Stir Fry

Ingredients:
160 g zucchini
1 Tbsp olive oil
60 g raw chicken, cut into 1” pieces
25 g spinach
25 g lemon juice
½ tsp garlic powder
salt & pepper, to taste

Directions:
1. Using the C-blade, spiralize zucchini into noodle shapes with a spiralizer.
2. Heat a large skillet to medium heat, add 1 tablespoon of olive oil and chicken pieces. Turn pieces over occasionally while cooking for about 7 minutes. Chicken is done when the internal temperature reaches 160°. Add a dash of salt and pepper to chicken.
3. Add zucchini noodles, spinach, lemon juice and garlic powder. Cook until noodles soften, about 3 more minutes, tossing frequently.
4. Transfer to a serving bowl and top with fresh ground pepper to taste!
